I've never seen commercially made mayo from olive or coconut oil. I know some people avoid canola oil because of the highly refined production and/or erucic acid, shown to be deleterious in animal studies. However, Loren Cordain (Paleodiet) recommends canola because of its high monounsaturated oil ratio and omega-3 ratio. The erucic acid content of commercial canola is quite low. I use Best Foods (aka Hellmans) canola mayo. Homemade mayo with olive oil is awesome, but I agree that its inconvenient. I'm not quite sure if you could make mayo with coconut oil - isn't it solid at room temp? It'd be difficult to gradually whisk into the egg yolk.
