I would recommend switching to a more Westside Barbell/Conjugate approach. I think your numbers will shoot up. After doing 28 weeks of slow moving (bar speed) linear progression, adding in some speed...

Personally I would do the lifts I wanted to focus on after a rest day. For example, focusing on BS/DL:

Day1: Back Squat
Day2: Rest
Day3: Deadlift
Day4: MetCon
Day5: FS
Day6: Press
Day7: Rest

Yes, you continue on and do it.

Also, it shouldn't be "if" you PR. You should be PRing every week. BUT you can't expect to make 20lb jumps every week like you did this past week.
