I'd definitely recommend Paleo for IBD. I overcame colitis with the diet.
I'd recommend staying away from dairy though. Many swear by raw yogurt and kefir - and they can be helpful and...

Pollan has some good stuff. Somewhat OT but check out the DVD Food, Inc. for a look into what really goes into conventional foods. Good motivation for going Paleo!
