Seems doable to me.

Would eating smoked salmon twice a day (lunch and dinner) be advisable? How much should I eat? What veggie options would be advisable?

Looks like some good options there.

What about eating mostly raw veggies/fruits and precooked lunch meats and so forth? Could a reasonable diet be crafted that way?

hate to dig up an old thread, but this one describes the exact injury I currently have.
