Good question. We don't bail out of low-bar squats because we spot heavy sets here, and I've never done it. But there is an excellent case to made for practicing this movement. Let me know what happens.

RE bailing out - you bail out however you can. With weights beyond your own bodyweight, you don't really get to decide. Obviously the preferable method would be to dump the bar behind and jump forward; but if the bar is pulling your chest down to a point beyond recovery, you're clearly lacking the back strength to hold it up, so how would it be possible to suddenly get the strength to bring the torso erect to allow the bar to drop back? I've successfully bailed out backwards underneath the bar twice - the key is speed. It's dicey and spotters are certainly safer, but like I said, you don't really have a choice once you've lost control of a bar weighing double what you do.
