I tried these mixed veggie chips made by a local natural food market... there are no nutrition facts but the ingredients list says:

sweet potato, carrot, green beans, taro, non-hydrogenated canola oil, and sea salt

I'm not sure if they're baked or fried, but I'm guessing they're baked. How "healthy" would you say these are?

I've seen very similar chips at a couple places (Trader Joe's comes to mind). I think they're a step up from Lays' but still not that good. They are likely still high-GI (sweet potato as first ingredient) and contain canola oil which isn't the most natural of oils.
