Kettlebells in the Kitchen
 
Hey Guys!
There are some AWESOME workout logs on that I follow on a regular basis (long time lurker, almost never poster!), but I had a hard time finding a lot of comprehensive food logs that include recipes and meal ideas. (The search function kind of sucks though, so if they are on here, please let me know!!) I know a lot of really good food blogs are out there, of which I use as inspiration all the time.

So, anyways, I figured, what the hell? I'll start a food log here.

Just to give you a quick background, I am a 28 year old married high school teacher in NYC. I've been crossfitting since August with my husband. I have about 20 lbs. to lose, and I've been Paleo since August as well; although this past week, with Thanksgiving, was NOT Paleo!!

Anyways, I'll be sharing my recipes, and I would LOVE for you to share yours!!

And to get me started....

Roasted Chicken in the Crockpot

This is probably one of the simplest things I make, thus making it a favorite in my house! There is nothing better than coming home after work to your whole house smelling awesome. Cooking in the crockpot feels like someone else made dinner for me, and all I have to do now is enjoy.

What you need:
1 Whole Chicken, size depending on your crockpot and how many you need to serve
5 to 7 Whole Carrots, peeled and cut into large pieces
1 Bag of Frozen Broccoli (or whatever veggies you prefer)
1 Lemon
1 Head of Garlic
Salt and Pepper

Rinse the chicken and take out the giblets, pat dry with a paper towel. Slice the lemon in half, put into chicken cavity. Slice the head of garlic in half, put into chicken cavity. Put chicken into crockpot, cover with veggies. Salt and Pepper everything. Cover and cook on low about 5 hours. I always get a chicken with a pop-up timer so I know exactly when it's done.

I've seen about a million different variations of this, and they are all good! If you're not totally Paleo, this is also awesome with a sweet potato.

Really? AWESOME! I've read so many different thing about potatoes (and sweet potatoes) that I figured I would keep them out of my diet until I reach my goal weight.

I love crock pot recipes and this one looks good. Do you put any liquid at all in the crock pot with it??

Nope, no need to put any liquid in with the chicken. It just cooks in it's own delicious juices! :) Any time I've put in liquid with it (chicken stock, water, etc.) it just gets too soggy.

Definitely. They're fairly high in carbs, so I wouldn't be eating a ton every day, but they're not 'bad' for you. Also, sweet>regular.

Here's what I made for dinner:

Turkey Meatball Soup

5 to 7 large carrots, peeled and cut into medium sized pieces
1 whole head of celery, cut into same sized pieces as carrots
2 medium onions, cut into tiny pieces
2 32oz cartons of beef broth
2 32ox cartons of chicken brroth
1 egg
1 lb of ground turkey
salt and pepper
1 tablespoon of olive oil
1 tablespoon parsley (if you're fancy)

Put olive oil in large soup pot over medium-high heat. (On a scale of 1 to 10, I put my stove on 8). Throw onions in and let them hang out for a while, until pretty clear. Toss in carrots and celery, salt and pepper. Stir a bunch of times so everything starts to cook pretty evenly. Put in broth and let it come to a boil.

In a different bowl, combine the egg and the meat (and parsley) and make meatballs! They can be big or small, depending on what you like. We like them small so that there are still plenty in the leftovers! Put meatballs into the soup, but DON'T STIR. Not yet. Let the meatballs cook a little bit so they don't fall apart when you do stir.

Let this cook on medium (a 5 out of 10 on my stove) for about 15 minutes.

You can also do this in the crockpot!! Just throw everything in and cook on low for about 4 to 5 hours. You just have to watch and test it so the meatballs don't dry out.
