The lectins in potatoes are concentrated in the skin. Once peeled potatoes have very little lectin load.

What people don't understand is that ALL plants have lectins, some more than others and some cause more problems than others.

My understanding is that this is also true of brown vs white rice. Am I wrong?

White rice, being more refined has less irritants than brown rice. It also has less fiber.

I've heard If you ask a person of Asian decent what kind of rice is preferred in traditional cooking they will almost always say white "polished" rice. I've heard that brown rice is considered, "dirty" or substandard. *

*I'm repeating this second hand, I don't remember if it was Robb Wolf or Mat LaLonde who originally said it.

I heard something similar from a Chinese chef many years ago. Brown rice is the cheap stuff, not the good stuff.

"Animal feed" is a term I have seen thrown around.
