What to do with chicken fat.

I have been cooking a lot of chicken lately. I get the free range skin on chicken from the farmers market. Since they are skin on when you cook them I get a lot of fat draining off in the pan.
I was wondering if this has any use? I save the bacon fat / grease when I cook that for cooking later. Is there anything I can do with chicken fat?

Thats an idea.

I already eat the fat under the skin. Thats the best part.

i pour it over veggies and roast them.

I was at a Japanese Restaurant yesterday. I was having Hibachi Steak for my meal. The guy was chopping it up and he chopped the fat off and before I could say a word he flung it into the garbage hole at the grill. A tear rolled down my cheek. That's my fav part of the meat.
