Cooking with coconut oil

I've read back on a few posts with people mention their uses for coconut oil when cooking chicken, veggies, and eggs.

I just starting frying my eggs in the stuff and want to expand. Does anyone have some interesting uses other than frying/sauteeing?

Really easy fudge:
1/2 cup coconut oil
1/2 cup almond butter
1/4-1/2 cup cocoa powder
honey to taste.
Process in a food processor and refrigerate until it sets
