I keep it pretty simple. A small Fuji apple and a ton of cinnamon. Or a banana. Or I went super sweet yesterday and added in some dried dates. So good! Peaches are really good too, pretty much any fruit.

I like almond butter and some blue berries. Don't really eat oatmeal anymore.

I like to do a serving of oatmeal with:

1 tb Flax Seed (ground)
1 tb Amaranthe (or quinoa => Maya/Inca grains)
1 ts Cinnamon
? Nutmeg

I usually eat fruit on the side, but raisins are always good in oatmeal. Any fruit, I would add after cooking so the enzymes (etc) are still alive.

10 raisins
5 chopped almonds
A tb chopped fresh coconut
A pinch of salt
Plenty of cinnamon

All these suggestions (some I have tried and many I have not) sound awesome! I cannot get enough oatmeal, love the stuff.
Most often I make my post-training recovery shake well ahead of my session, adding some oatmeal to the mixture, then tossing it in the fridge. By the time I need it the oats are soft. Sometimes my training may go over an hour and the extra carbs with protein are immediately crucial.

I go with Bob's Red Mill Gluten Free Oatmeal.

Also delicious with salmon. I use salmon with a couple strips of bacon, sliced carrots, almonds, and drizzled with honey in a small dish on a bed on oatmeal. Covered tightly and slowly baked.
Usually the bacon makes it salty enough, giving that sweet/salty flavor.
