As a side note I was thinking of creating a paleo recipe wiki that would be open for people to add recipes, be able to search for recipes, etc. To deal with spammers i would make self registration required, easier to block spammers if I can log their IP address.

1cup pitted diced dates + 1cup ground nuts + 0.5cups shredded unsweetened cocunut + flavoring (fruit, coffee, whatever) = win

For "flavoring", I have done:
-unsweetened cocoa + peppermint extract
-crushed pineapple + orange zest + orange juice concentrate
-dried peaches
-dried cherries + diced apples + cinnamon + nutmeg

I kind of play it by ear. If the mixture doesn't look like its going to hold together, I add an egg, and bake them. If it does look like its going to hold up, I just won't bake them. It helps to mix the fruit together first in a food processor, take it out, then process the rest, and add them together.
