This is a great thread.
I have a stuffed Italian meatloaf recipe off the top of my head.
1 pound ground beef or buffalo
1/4 pound Italian sausage
8 oz. Ricotta
2 hard boiled eggs
Mix up your meet the way you like to with seasonings and all. I add oregano, salt, pepper, parsely and coriander. Add the egg and mix together.
Mix ricotta with an egg, salt and pepper to taste and add some fresh parsely.
Layer a loaf pan with about 1/2 the mixture and build it up on the walls equally as thick as the bottom is. Then add the ricotta mixture. Take the two shelled hard boiled eggs and press them into the ricotta mixture making sure they are all the way in. Cover the top with remaining meat mixture.
Cook at about 375 for about 35-45 minutes or until done. Let sit for 10 minutes or so before serving.
Serve on top of a some marinara sauce with some other veggies that you like.

flaxmeal pizza crust
Homemade tomato sauce:
(experimental, first time trying it, adapted from http://www.cooks.com/rec/view/0,1618...255199,00.html WFS)
3 roma tomatoes, diced and placed in a 2-quart saucepan
Added just enough organic sulfite-free merlot to cover the tomatoes
Dried garlic, oregano, marjoram, salt, and pepper to taste
Boiled, stirring/chopping with spatula until it was a sauce consistency
then topped it with diced tomatoes, green peppers, and shredded baked chicken. Mmm Mmm!
I just discovered this thread today and I'm so disappointed to see that it's been dead since January. Looks like some good recipes and I can't wait to try more of them out!
