Sue since Buffalo meat is so lean does it come out dry? I'd imagine its something thats better if its slow cooked. I've done that with venison before and had it turn out really tender. I usually brine chicken in kosher salt for a few hours before I grill it to keep it tender. I wonder if the same would work with Buffalo.

JJ, the buffalo pot roast, when slow-cooked, is just awesome. I've also made it with chuck and bottom round, all very good.

The ground meat, surprisingly, is very flavorful and not at all dry, I don't know why. To us---even my kids---it's just a richer, heartier flavor than a beef burger. I haven't grilled the burgers, I usually make 'em on a cast-iron griddle. No cooking fat required.

The only cut I would not buy again is the buffalo flank steak. That's too lean for me, but to be fair, I didn't brine it or marinate it.

The Dines Farms meat is hands-down the best meat I ever ate. He sells EVERYTHING: free range turkeys, chickens, grassfed lamb, natural pork. He sells liver and tongue pretty cheap, too. There's a lot of literature to support eating organ meats---but only of grassfed/ naturally raised animals!

I really do like to cook. And eat.

Hiya peeps.

Matt and I hit CFT's yesterday. We both improved our scores, he to 865 and me to 885. Feel like I should have done more on the press but the 45 muscle ups I did before starting probably didn't help.

Matt, I'll be there at noon to do the WOD if you wanna knock it out. Call me at 488-4388 if you're coming.

I got un-lazy and signed up for the forums!

4/6 - did last Wednesday's WOD that I missed

5 rounds for time of:
30 GHD sit ups
25 back extensions

17:41

And then probably equal time on the floor afterwards for recovery.

Good to see you on the forum, Yvonne! Wednesday's WOD on the ghd was decievingly difficult. Glad you got that one in. By the bye, you were a power house on Friday!

A little late but Friday I came in for a much needed JT.

time:8:21 although i don't think i went deep enough on the ring dips on the second and especially the third sets.
