Haven't tried it, but the method should work the same regardless of what meat you use. Maybe make sure you get it extra dry since poultry naturally has more critters in the meat.

I'm not a big fan of Jerky. I can eat it(it is meat), but why. I prefer other snacks, i.e. meat cookies, bacon, the list is endless.

I'm also not sure that you haven't crossed the line by buying Brisket(the meat cut that was personally created by God) and drying it out(you should be whipped with a battling rope) then eating it. At 7 bucks a pounds, that's beyond pricey.

Instead of buying box fans and researching other methods of drying out food, which is nothing more the removing the liquids, do you have the following:

Cast Iron Cookware
Pressure Cooker
Crock Pot
Grill, gas or charcoal
local source for great meat, eggs, veggies.
Great cookbooks and the ability to read and cook.

I'd spend my time and money on the above, and if you're dying for a "snack", make some meat cookies, trail GORP, what ever.

Follow me on this. You and I are hanging out, looking cool(well, least I'm looking cool, I don't know you), two hot chicks walk buy, we strike up a conversation. The chicks are really coming on to us(well, at least to me, I don't know about your coolness factor), then the subject of food comes up.

They casually ask if there is any great places to eat and the replies are:

Well, I make a mean Jerky, you want to go to my place???

Well, I just smoked some killer Ribs and have Brisket that will fall off your fork, which means that I'll have to serve you one bite at a time by hand, along with a local wine that was pressed by young virgins, steamed local grown veggies, topped up with local strawberries hand dipped in chocolate, with enough chocolate left over that we can use for body paint.

You still want to make Jerky!!!!!!!!!!!!!!!!!!!!

My traditional jerky recipe has soy sauce and teriyaki sauce in it - holy salt and sugar batman!

When I did the 30-day paleo challenge I improvised with this:

2-3 lbs round roast, sliced 1/4" thick
juice of 3 limes
1 Tbsp "salish" smoked salt
1 Tbsp onion powder
1 Tbsp garlic powder
1 Tbsp chili powder
1 cup water

Put the meat in a medium or large ziploc bag. In a bowl or measuring cup mix the lime juice with the spices and water. Stir until well mixed and the salt has dissolved. Pour over the meat in the ziploc bag, seal, and massage for a minute to be sure the marinade gets everywhere. Marinade overnight, dehydrate whatever way works for you.

You can use regular salt if you want, maybe add some liquid smoke if you do. The salish salt adds a nice smoky flavor. Here's a link to the product:
