The less processing the better...go with unrefined, virgin coconut oil.

yes, unrefined! If you get refined, you don't get that lovely coconut smell & taste, i hear it is pretty flavorless/odorless.

Refined is flavorless. On the other hand, some foods don't taste good with coconut. I use the unrefined kind, I bake with it, and cook all my Indian, Thai, Southeast Asian, and soul food in it. Things like Italian, Chinese, etc. that wouldn't taste good with it, I use liquid oils and don't bother with refined coconut oil.

Rachel, lard is a neutral tasting fat. Get it from pastured pigs and eliminate the liquid cooking oils. Add those after the fact.

...or even unrendered back fat from pastured pigs.
