My Favorite Zone Recipe!!
Just thought I would share one of my all time favorite Zone Recipes, Chicken Salad. I first discovered this on the CrossFit Journal from a post Matt and Cherie Chan put together, titled: Nutrition Prep Day with the Chans - Chicken Salad.
I have been making this chicken salad for the past year and have tinkered with different spices, seasonings, veggies and even different fats. This recipe is pretty flexible and allows for lots of creatively so you don’t get bored or tired of eating the same thing over and over again. This recipe is a great starting point for beginners on the Zone Diet and will make learning the process simple and manageable.
Thought I would share, if anyone else has some go to zone recipes please share!!

2 egg yolks
1 tsp mustard (this is optional)
3 tsp lemon juice
1/2 cup olive oil
1/2 cup coconut oil
1 cup liquid bacon fat (you can of course use rendered lard, itís the same thing) in place of the olive and coconut oils
1. Put the yolks in a bowl (blender, food processor) with the mustard, if using and 1 tsp lemon juice and mix those ingredients together;
2. Start whisking vigorously (blender or food processor on low) while dripping the oil very slowly, even drop by drop in the beginning. Youíre creating an emulsion and if you put too much oil at once, it will separate and will be very hard to save. Whisk non-stop and use a towel under the bowl to help stabilize it;
3. As you add more oil, the emulsion will form and the mayonnaise will start to thicken and you can pour the oil faster at this point;
4. When all the oil is incorporated and the mayonnaise is thick, add the rest of the lemon juice and taste your creation. You can season to taste with salt and pepper

Thanks for posting this recipe. I made the chicken salad and it was amazing. This could definitely be one of me go to meals now.
I was surprised I liked it so much, especially cuz I don't normally like cold chicken (like it heated up). However, it meshed well in this.
I'd never thought of using regular mustard as a base for dressing, but it tasted great. I did break up the spices a bit and didn't use all the ones in the recipe. I also added cumin and it worked really well. I did the "alternative" dressing as I skipped the eggs. Even though I have my own chickens I still get unnerved about eating raw eggs.
Anyway...worked great. Thanks!
