Rachel's hot chocolate revised

So a couple months back I posted a thread about my amazing hot chocolate concoction. What I realized is that the consistency was more like soup than a drink ... so instead of hot chocolate, I now make this soup mixture into an AMAZINGLY good chocolate pudding substitute.

1 can of coconut milk
2 big scoops of cocoa powder
2 scoops chocolate protein powder

Boil coconut milk and then add the powders. The mixture will be kinda chunky ... but refrigerate it for at least a couple of hours, and it turns into a chocolate pudding-like consistency and tastes AMAZING. Satisfies my sweet tooth any day.

coconut milk, i'm assuming, is not going to be found in the local grocery store. which health food stores can you buy this at?

Actually, it's usually found in the ethnic foods section at any grocery store.

Will definitely be trying this out!

I normally buy the Thai Kitchen brand in our local store. They also carry it at whole foods, and should carry it in the ethnic sections.

It's quite tasty!

Just got a can of thai kitchen full fat and am gonna try it out soon. On another note Rachel in your avatar is that you back squating in a full arm cast?!

If not what is it?

Haha YUP it sure is! Nothing can stop me ... not even a full-arm cast!

Wouldn't just adding water in an equal amount to the cocunut milk make it more drink-like and less like soup? For the Hot Chocolate recipe, I mean.

lite or regular coconut milk? i assume regular. lite is just regular+water.
