I live alone and coped fine. As Gravel suggested I pre-prepared about 14 evening meals. Not the entire meal but the bit that would require chopping! Re-heating and cooking pasta etc...

Could you be lacking energy because you're not eating enough? Being on your feet all day is fairly active, if you then want to exercise you probably need to consume quite a lot.
