Spinach can be easily included in a nice pesto, simply add olive oil, garlic, pine nuts, salt and pepper, throw it all into a mixer and enjoy.
That pesto goes nice to whatever stuff you might be...

A baby tends to sleep ocasionally. Maybe your husband will find the time to babysit the two year old in the meantime, allowing you the luxus of time to cook what you feel like...
