I've never understood why some people balk at rest. Rest is just as important to improvement in fitness as the work portion. Your muscles can't grow without rest, and 1 day is not always enough...

I'd say make sure you are eating right before hand too. That post-class crash could be due to a too-large drop off in nutrient energy, induced by using up whatever you had in you during the class. ...

To the original poster, I'd recommend my school, Chi Do Kwan. It's one of the 9 schools that later were merged to form Taekwondo. But Chi Do Kwan (also Jidokwan) is what some might call "old school"...
