I recently discovered squash is it an acceptable thing to eat?
Depends on the type of squash....according to the Zone block chart (http://www.mitymous.net/weights/zoneblox.htm), yellow and spaghetti squashes are fine, butternut is "moderately favorable" and should be eaten sparingly, and acorn and some others I haven't heard of are unfavorable. If you're doing Paleo, I'd say not to worry too much about squash....go easy on the butternut and acorn and eat up on the others.
Here's a recipe I found for butternut that was quite tasy:
1 butternut squash, halved longways and seeded
2 tbsp olive or coconut oil
Cut the squash in half and remove the seeds. Place it face down in a baking dish, add about an inch of water, and cook at 350 for 1 hour to 1:15. When done, remove the meat and mash it. Allow it to cool a bit, then add the oil, walnuts, and cinnamon. 3/4c cooked butternut squash is 1 block of carbs...1 butternut squash should yield 4-5 blocks of carbs with ~30 blocks of fat (you could cut the oil in half to knock out 9 blocks of fat).
